Shortcake on the Grill

Serves 6 to 8

2t Butter, softened
2 pints Strawberries or 2cups pineapple slices
½ c Butter, softened
¾ c Sugar
1t Vanilla
2 Eggs
1c Flour
1T Baking powder
Pinch of salt

#1 Preheat grill to a low heat around 300 to 350 degrees (Your gas grill should have a thermometer if not you can use an oven thermometer).
#2 Grease a 9-inch cast iron skillet with the 2t softened butter and arrange fresh fruit around the bottom of the pan.
#3 Beat ½ c softened butter with sugar and vanilla until well combined, then mix in an egg at a time.
#4 Mix flour, baking powder and salt and add to sugar mixture, stir until just combined.
#5 Pour batter over fruit and place on grill cover with grill lid and cook for 45 minutes or until knife inserted comes out clean.

* Serve with whipped cream if desired.
