Sweet Potato Hash

Makes 4 servings

1 large sweet potato, sliced in thin half moons
1 small onion, peeled and sliced in thin half moons
1 pablano pepper, diced
½ teaspoon salt
1 teaspoon cumin seeds
1 teaspoon dried oregano leaves
2 Tablespoons olive oil

Preheat oven to 400°.

Toss all ingredients together and spread out evenly over a sheet pan, cover tightly with foil and bake for 30 to 40 minutes or until sweet potatoes are tender. Uncover potatoes and turn potatoes over to brown on the other side for 10 minutes.
