SPANISH STYLE QUINOA

1T grapeseed oil
1 small onion, diced
2 cloves garlic, minced
1 poblano pepper, diced
1t cumin
½t cayenne pepper
1 cup quinoa
2c low sodium chicken stock
2T tomato paste

Heat a saucepan over moderate heat and add oil, onion, garlic, poblano, cumin and cayenne pepper sautéing for 1 minute. Add quinoa, chicken stock, and tomato paste. Stir until tomato paste is combined well. Bring to a boil then immediately reduce temperature to low heat, cover and cook until tender approximately 15 minutes.
