Pico de Gallo

2 cups ripe tomatoes, diced small
1/3 cup red onion diced small
1 jalapeño, finely minced
1 lime, freshly squeezed
2 tablespoons fresh cilantro
sea salt, to taste
black pepper, freshly ground, to taste
sugar, to taste

1. Toss all ingredients together.
2. Season to taste with salt, pepper and sugar.
3. Allow to sit for one hour before serving.
