Orange Almond Pasta

2 cups sugar
¾ cup water
¼ cup fresh orange juice
2/3 cup heavy whipping cream
2 tablespoons unsalted butter
2 teaspoons orange zest
1 cup sliced almonds
1 pound long pasta

Stir together the sugar, water and orange juice in a heavy large saucepan. Cook without stirring until mixture turns deep amber color, occasionally swirling pan and brushing down sides with pastry brush dipped into water, about 15 minutes.

Add cream and butter to hot caramel mixture. Boil until smooth and slightly thickened, whisking often, about 5 minutes. Add orange zest and almonds. Cook until the almonds are toasted. Toss with the pasta and serve with the turkey.
