Orange Almond Pasta2 cups sugar Stir together the sugar, water and orange juice in a heavy large saucepan. Cook without stirring until mixture turns deep amber color, occasionally swirling pan and brushing down sides with pastry brush dipped into water, about 15 minutes. Add cream and butter to hot caramel mixture. Boil until smooth and slightly thickened, whisking often, about 5 minutes. Add orange zest and almonds. Cook until the almonds are toasted.
