Brownies
4 ounces unsweetened chocolate
8 ounces unsalted butter
2 cups sugar
4 eggs
1 cup unbleached flour
1 cup nuts (optional)
- In a heavy saucepan over medium heat, carefully melt the chocolate and butter together. Stir in the sugar, then the eggs one at a time, then finally the flour and nuts if using.
- Transfer to an 8 or 9” square pan that has been lined with parchment, buttered, and floured, and bake in a preheated 350° oven until firm but still soft in the middle, about 20 minutes. Cool in pan and cut into squares to serve.
