BARBECUED PORK

1 pound Pork belly, sliced lengthwise into 1" strips
3 each Garlic cloves, crushed
1 teaspoon Salt
½ teaspoon Ginger, grated
1 tablespoon Light soy
1 tablespoon Honey
1 tablespoon Xiao hsing or dry sherry
½ teaspoon Five spice powder

Lemon juice
Hoisin and/or plum sauce
Grilled scallion

  • Marinate pork in garlic and five spice for at least four hours.  Remove, pat dry, reserve liquid.

  • Using paper clips, hang each strip of pork from the top rack in a 450° oven, and roast for 25 minutes.  Brush on some of the remaining marinade and roast 5 more minutes.

  • Repeat brushing and roast until caramelized.

  • Cut in slices, serve with remaining ingredients.
