Spinach Sauté

Prep time: 10 minutes
Cook time: 3-4 minutes
Makes: 4 – 6 servings

2 tablespoons Olive oil
1 Small shallot, minced
2 10 ounces packages of fresh spinach, stems removed and rinsed (slightly damp)
2 cloves Garlic, minced
To taste Sea salt
To taste Black pepper, freshly ground

Sauté and serve:
-Heat a large skillet over medium high heat until hot and add oil.
-Add spinach.
-Add shallot and garlic on top of spinach.
-Toss with tongs until spinach is wilted, about 2-3 minutes.
-Season to taste with salt and pepper and serve immediately.
