Boot Camp explores all the fundamental methods of cooking. Working from the basics to advanced techniques, each day builds on the previous day. This is a great opportunity to improve upon your skills with a trained, professional chef at your disposal.

This program is suitable for students of all skill levels. Beginners in the kitchen will learn all the basics and come away with the confidence to cook independently. Those with some experience will broaden their culinary knowledge, hone their skills, and acquire valuable tips and insight so they can take their culinary ventures to a new level.

  Day 1: Knife Skills, Butchering, and Stocks
  Day 2: Meat Cookery
  Day 3: Classical Sauces and Soups
  Day 4: Vegetables and Grains
  Day 5: Flavor Dynamics and Meal Composition

Each day's session combines the chef's lecture and demonstration with individual hands-on execution of recipes that feature the essential techniques in modern cooking. At the end of the day, you and your fellow students will serve your finished dishes and enjoy a cooking roundtable, engaging in an informal discussion and review of techniques and culinary topics.

On the last day, you’ll bring everything together to plan and produce a menu with your classmates, incorporating all the skills you’ve learned throughout the week.

Chopping Block Boot CampWhat will I learn?

  • Professional knife technique
  • How to select and cook meat, fish and vegetables
  • Sauteing, simmering, grilling, roasting, braising, and frying
  • Proper use of cookware and essential kitchen tools
  • Recipes and methods for soups, stocks, sauces, appetizers, entrees, salads and more
  • Uses of herbs and spices, understanding basic flavors and complex flavor profiles
  • Menu and time planning
  • Tricks of the trade from seasoned professionals

When is it offered?

Culinary Boot Camp is offered 4 to 5 times per year. The course is five consecutive days, Monday through Friday, 9:00 a.m. to 5:00 p.m.

Where is it?

Boot Camp is held at the Chopping Block in the Merchandise Mart.
We are in the northeast corner of the Mart, 1st floor, near the corner of Kinzie and Wells.
PARKING: The Merchandise Mart is conveniently located near several downtown parking facilities, including an indoor garage and an outdoor lot right at the corner of Kinzie and Wells Streets. Metered street parking can also be found in the area.

How much does it cost?

The course fee is $1750.00.

Chopping Block Boot CampFee covers instruction and all materials and ingredients to be used in class. Tools and aprons are provided for use in our kitchen.

Payments accepted: Cash, Visa, Mastercard, Discover, American Express, or Chopping Block Gift Card. No checks, please.

You will be required to submit a credit card number upon registration to hold your place in class. Your card will not be charged until the first day of class; you may opt to bring another method of payment, and we will not charge your credit card.

How do I sign up?

Advance registration is required. You may sign up online or by phone.
To enroll online, go to the session you wish to attend on our Class Calendar. Click on the first date of the session, and follow the prompts to register. You will receive confirmation of your enrollment via e-mail.
